Honey Apple Butter-Pecan Muffins

*makes 1 1/2 dozen

the pecan streusel
3/4 cup chopped pecans
1/2 cup dark brown sugar
3 Tbsp ap flour
1/2 tsp ground cinnamon
2 Tbsp melted butter
preheat the oven to 375 degrees
toss together all of the ingredients in a small bowl
set aside
*the mixture should look well combined & crumbly

the muffin batter
4 cups ap flour
3/4 cup dark brown sugar
1 tsp baking soda
1/2 tsp table salt
1 cup Kyvan Honey Apple Butter
1 cup whole milk
2 eggs
1/3 cup melted butter
1 Tbsp fresh lemon juice
Butter * Honey Apple Butter


crumble the brown sugar over the flour & combine well using your hands in a large bowl
break the lumps w/ your fingers until the mixture is well combined
whisk in the baking soda & salt


stir together the apple butter, milk, eggs, melted butter & the lemon juice in a medium bowl
create a well in the center of the dry ingredients
combine the milk mixture w/ the flour mixture
gently stir together the ingredients using a folding motion w/ a rubber spatula
do not over mix
however be certain any loose flour is combined well
lumps in the batter are perfectly acceptable

portion the batter between 18 lightly greased non-stick muffin cups
divide the streusel between the tops & gently press into the batter to adhere
{the cups will be full}
bake both pans on the center rack for 17 to 19 minutes or until a wooden pick tests clean
do not over bake
cool on a wire rack a few minutes
gently remove the muffins from the tin using a paring knife
serve warm w/ softened butter & additional Honey Apple Butter

the leftovers
place any leftovers in a plastic zip-top bag & store in the freezer
to reheat
, thaw in the microwave
