APPLE BUTTER MINI CHEESECAKES

INGREDIENTS:
12 Graham Crackers
6 tbsp Unsalted Butter
½ tsp Pumpkin Pie Spice
16 oz Cream Cheese
3 Large Eggs
14 oz Sweetened Condensed Milk
¼ cup White Sugar
1 tbsp Lemon Juice
½ cup Apple Butter
Cooking Spray
DIRECTIONS:
Preheat the oven to 350°F. Spray 4 5-inch mini pie pans with cooking spray.
Crush graham crackers thoroughly. Mix graham cracker crumbs, melted butter, and pumpkin pie spice in a medium bowl until well combined; press onto the bottom of each mini pie pan to make a packed crust.Mix softened cream cheese, room temperature eggs, lemon juice, and white sugar in a large bowl until smooth. Pour filling onto prepared crust. Add 2 tbsp of apple butter to each dish.Using a toothpick, make a design by moving the apple butter back and forth, one direction at a time. Cook for 15 minutes at 350 degrees. Let cool and enjoy. Store in an airtight container in the refrigerator.
