Roasted Chicken & Vegetables with Ginger Ale Pan Gravy

Roasted Chicken & Vegetables
with Ginger Ale Pan Gravy

makes 4 to 6 servings

4 carrots, peeled & cut into {1-inch} pieces
1 large sweet onion, cut into small wedges
2 shallots, peeled & quartered
6 tsp Kyvan Savory Chicken Seasoning, divided
1 {12-oz} can ginger ale, divided
2 Tbsp Kyvan Honey Apple Butter
1 Tbsp white wine vinegar
2 lbs skinless, bone-in chicken thighs, trimmed of fat
2 Tbsp butter
2 Tbsp ap flour
freshly ground black pepper
hot cooked rice

one
preheat the oven to 425 degrees

lightly grease an enamel-coated dutch oven w/ cooking spray
toss in the carrots, the onion & the shallots
sprinkle w/ 1 tsp of the chicken seasoning

two
stir together the ginger ale, the apple butter & the vinegar
pour over the vegetables
rub the chicken thighs w/ 4 tsp of chicken seasoning
place on top of the vegetables

bake, covered, for 45 to 50 minutes
or until the chicken tests done & the vegetables are tender
remove the chicken & vegetables from the dutch oven

pour the liquid into a 2-cup measuring cup
add the remaining 1 cup ginger ale & enough water, if necessary, to equal 2 cups

melt the butter over medium heat in the same dutch oven
whisk in the flour & cook until smooth
whisk in the drippings & cook until thickened & bubbly
stir in the remaining 1 tsp chicken seasoning & pepper to taste

once the gravy begins to bubble be sure & cook at least 1 minute

serve the chicken & vegetables over the hot cooked rice w/ the gravy

INGREDIENTS:
4 skinless chicken breast halves
4 teaspoons KYVAN Savory Chicken Seasoning
6 slices Swiss Cheese
4 thin slices of deli ham
Seasoned Breadcrumbs
4 toothpicks

DIRECTIONS:
Pound chicken breasts to 1/4 inch thickness.
Season each chicken breast with 1 teaspoon of seasoning and place 1 cheese slice and 1 ham slice on top of each breast.
Roll each breast and coat with breadcrumbs.
Secure with a toothpick.
Place chicken in a greased baking dish and bake at 350 degrees for 30 minutes.
Remove chicken from oven and place half a piece of cheese on top of each breast and bake another 5 minutes.
Remove from oven and also remove toothpick and enjoy.

INGREDIENTS:
1 stick of butter
2 pounds of shrimp (peeled and deveined)
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
6 green onions chopped
KYVAN Cheese Grits Recipe

DIRECTIONS:
Refer to KYVAN Cheese Grits recipe for the grits.
On medium heat, cook shrimp in a pan for 3 minutes with butter.
Add lemon juice, Worcestershire sauce, and onions and cook 2-3 minutes.
Remove from heat.
Individually serve shrimp mixture on top of grits.

INGREDIENTS:
1 cup instant grits
2 cups water
2 chicken bouillon cubes
2 tablespoons butter
3/4 cup heavy whipping cream
1 cup extra sharp shredded cheddar cheese
1/2 teaspoon KYVAN Savory Chicken Seasoning

DIRECTIONS:
In a medium pot, boil water, butter, and chicken cubes on medium heat.
Add grits and stir for 5 minutes.
Pour-in seasoning, cream, and cheese and stir until grits become creamy.

INGREDIENTS:
1 pound small red potatoes (cleaned and cut in half, unpeeled)
2 teaspoons KYVAN Savory Chicken Seasoning
2 tablespoons olive oil
1/2 teaspoon dried rosemary
1/4 teaspoon salt

DIRECTIONS:
Fill large bowl with potatoes and pour oil and seasonings on top.
Stir and place potatoes in single layer on greased baking sheet and drizzle remaining oil and seasoning from the bowl on top of each potato.
Bake at 425 degrees for 45 minutes (turn once halfway during baking).

INGREDIENTS:
6 boneless skinless chicken breast halves
2 teaspoons KYVAN Savory Chicken Seasoning
1/2 cup seasoned breadcrumbs
1/4 cup Parmesan & Romano cheese, grated
1 stick melted butter

DIRECTIONS:
In a bowl, mix breadcrumbs, cheese, and chicken seasoning.
Place melted butter in a separate bowl.
Dip chicken in butter and then evenly coat each side of chicken with breadcrumb mixture.
Place chicken in an ungreased glass baking dish.
Drizzle remaining butter on top of chicken.
Bake at 375 degrees for 25-35 minutes (turn once halfway during baking).
*Optional: Top chicken with marinara sauce and shredded cheese! Enjoy.

INGREDIENTS:
2-3 Salmon Filets
2 tablespoons olive oil
1 teaspoon KYVAN Savory Chicken Seasoning
1/4 teaspoon black pepper
1/2 teaspoon rosemary

DIRECTIONS:
Coat the bottom of a small glass cooking dish with 1 tablespoon olive oil.
Place Salmon in cooking dish and take the other tablespoon of oil and coat each salmon fillet and season with pepper, rosemary, and chicken seasoning.
Bake at 400 degrees for 15-20 minutes.

INGREDIENTS:
16 oz. bag coleslaw mix
1/2 cup salad dressing
3 tablespoons canola oil
1/4 cup sugar
1 tablespoon white vinegar
1 teaspoon KYVAN Savory Chicken Seasoning
1/4 cup raisins

DIRECTIONS:
In a bowl, combine the cole slaw and raisins.
In a separate bowl, mix the other ingredients and combine with the cole slaw mixture. Chill for 2 hours and serve.

INGREDIENTS:
1 1/2 pounds small red potatoes
2 eggs (boiled, peeled, and chopped)
1/4 cup onions (diced)
1/4 cup celery (diced)
3/4 -1 cup mayo
3 teaspoons KYVAN Savory Chicken Seasoning

DIRECTIONS:
Cut potatoes into quarters (do not peel) and boil until somewhat soft.
Remove potatoes from water and place in a large bowl.
In a separate bowl, combine the onions and other ingredients and stir.
Mix the potatoes and onion mixture together.
Chill for 2 hours and serve.

INGREDIENTS:
5-6 oz. ahi tuna steak
1 teaspoon KYVAN Savory Chicken Seasoning
1/4 teaspoon black pepper
1/2 tablespoon butter
2 tablespoons olive oil
KYVAN Sesame Garlic BBQ Sauce

DIRECTIONS:
Season whole tuna with chicken seasoning and black pepper.
Place oil and butter in skillet on high heat.
Once oil is hot, place tuna in skillet and sear on both sides for 30 sec to 1 minute each. Remove tuna from skillet and allow to cool a bit and cut into 1/4 inch slices.
Drizzle Sesame Garlic
Sauce on top of tuna slices and serve.

DIRECTIONS:
Place mushrooms, sliced onions, sliced green peppers, and sliced red peppers on skewers. Sprinkle with olive oil and sprinkle desired amounts of chicken seasoning on vegetables. Grill at 500 degrees for 10-15 minutes (turning every 5 minutes).

INGREDIENTS:
4 Ears of Corn (Remove Husk)
Olive Oil
KYVAN Savory Chicken Seasoning
Aluminum Foil

DIRECTIONS:
Coat each ear of corn with olive oil.
Sprinkle desired amounts of chicken seasoning on corn.
Individually wrap each corn with aluminum foil and grill at 500 degrees for 20-25 minutes (turning every 10 minutes).

INGREDIENTS:
7 slices bacon (crumbled)
12 oz. bag of broccoli cut into bite size pieces
1/4 cup red onions (diced)
1/4 cup raisins
1-2 tablespoons white wine vinegar
1/2 cup mayo
1/2 cup sunflower seeds
1 teaspoon KYVAN Savory Chicken Seasoning
1 tablespoon white sugar

DIRECTIONS:
Cook bacon, drain, and set aside.
In a medium bowl, combine broccoli, onions, and raisins.
In a small bowl, whisk together the sugar, vinegar, and mayo.
Pour over broccoli mixture and stir well.
Refrigerate for 2 hours.
Before serving, toss salad with bacon (crumbled) and sunflower seeds.

INGREDIENTS:
Head of Cabbage
3 cups water
2 tablespoons olive oil
1/2 red bell pepper (chopped)
1/2 green bell pepper (chopped)
1/2 large onion (chopped)
2 1/2 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon sugar
1 tablespoon Tabasco green pepper sauce (mild jalapeño)
1/2 teaspoon KYVAN Savory Chicken Seasoning

DIRECTIONS:
Chop cabbage and put in a big pot along with other ingredients except pepper sauce and cook on medium-low heat for 45 min to 1 hour.
Five minutes before cabbages are done, add the pepper sauce and stir.

16 oz. box macaroni
4 eggs (boiled, peeled, & cut into small pieces)
1/2 cup sweet relish
2 small bottles squared pimentos (un-drained)
8 oz. bag shredded cheddar cheese
Small onion (diced)
1/2 green bell pepper (diced)
1/2-3/4 cup Miracle Whip Original Salad Dressing

1 teaspoon sugar

DIRECTIONS:
Boil macaroni, drain water when done, and cool.
Pour macaroni in a bowl and add other ingredients (cheese last) and stir.
Chill for 2 hours and serve.

INGREDIENTS:
9 ready-bake lasagna noodles
2 tablespoons olive oil
1/2 cup broccoli, chopped
1/2 cup thinly sliced carrots
1 large onion, diced
1 red bell pepper diced
1 green bell pepper diced
1 small zucchini, sliced
1/2 cup all-purpose flour
3 cups whole white milk
1 cup grated Parmesan cheese
2 teaspoons KYVAN Savory Chicken Seasoning
1/4 teaspoon black pepper
1/4 teaspoon salt
1 1/2 cups chopped spinach
1 cup curd cottage cheese
24 ounces ricotta cheese
2 1/2 cups shredded mozzarella cheese

DIRECTIONS:
Heat oil in a large skillet over medium heat. When oil is hot add broccoli, carrots, onions, bell peppers, and zucchini. Sauté until soft and set aside.
Place flour in a medium saucepan and gradually whisk in milk until well blended. Bring to a boil over medium heat. Cook 5 minutes, or until thick, stirring constantly. Stir in 1/2 cup Parmesan cheese, chicken seasoning, salt, and pepper; cook for 1 minute, stirring constantly.
Remove from heat and stir in spinach.
In a small bowl combine cottage and ricotta cheeses; stir well.
Spread about 1/2 cup of spinach mixture in the bottom of the greased pan (9” X 13”). Layer 3 noodles, 1/2 the ricotta mixture, 1/2 the vegetables, 3/4 cup spinach mixture and 1 cup mozzarella cheese (Repeat this process again).
Finish the lasagna with one more layer: the last 3 noodles topped with remaining spinach mixture, 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese.
Bake in oven at 375 degrees for 35 minutes.

KYVAN™ Deep Fried Turkey

INGREDIENTS:
12 pound turkey
1/2 cup KYVAN Savory Chicken Seasoning
2 gallons peanut oil

DIRECTIONS:
Clean turkey and make sure turkey is TOTALLY thawed.
Pull out all the giblets, neck bone, and etc. from inside of turkey and cut the hole slightly bigger in the neck of turkey so that grease can flow through turkey when cooking.
Pat dry the turkey (inside and out) and then season turkey (inside and out and under the membrane) with chicken seasoning.
Cover turkey and let marinade overnight in refrigerator.
Pour grease in the fryer at the level specified on fryer.
Deep fry turkey at 375 degrees for 4-5 minutes per pound (12 pounds = 48 minutes).

INGREDIENTS:
2 bunches of fresh asparagus
1/4 cup olive oil
1 cup pecan halves
1/2 teaspoon black pepper
1/2 teaspoon minced garlic
1 teaspoon salt
1/2 teaspoon KYVAN Savory Chicken Seasoning

DIRECTIONS:
Properly prepare asparagus by cleaning and cutting the stems to your preference.
Add oil to skillet and turn on medium heat.
Add the asparagus then follow with the other ingredients only using 1/2 teaspoon of salt.
Cook 20 minutes and sprinkle the remaining salt on asparagus when done.

INGREDIENTS:
1 cup maple syrup
6 tablespoons soy sauce
3/4 teaspoon minced garlic
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/8 teaspoon KYVAN Savory Chicken Seasoning
2-3 Salmon fillets

DIRECTIONS:
Mix first 6 ingredients in a bowl. Then place salmon side by side in a small glass rectangular cooking dish.
Pour maple mixture on top of salmon so that salmon is submerged in mixture.
Cover the cooking dish and let salmon marinate in refrigerator for 30 minutes.
Preheat oven to 400 degrees and bake the salmon (uncovered) for 35 min or until flaked with fork.
Take out of oven and let cool in the sauce for 5 minutes.

INGREDIENTS:
8 ounces fettuccine pasta
2 tablespoons olive oil
6 oz. bag precooked chicken breast strips
1 cup small shrimp, shelled and de-veined
2 teaspoons KYVAN Savory Chicken Seasoning
1/4 teaspoon ground black pepper
1 teaspoon dry minced garlic
1 3/4 cups heavy cream
1/2 cup grated Parmesan & Romano cheese
2 teaspoons lemon juice
1/2 tablespoon dry parsley leaves
1-2 tablespoons white wine
1/2 cup baby spinach leaves chopped

DIRECTIONS:
Boil fettuccine for 8 to 10 minutes on medium heat; drain.
In a large skillet, on medium heat, pour-in the olive oil and once hot, combine chicken and shrimp and cook 2 minutes on each side.
Sprinkle chicken seasoning, mince garlic, parsley, and pepper on chicken and shrimp. Add cream, wine, lemon juice, and spinach and cook until slightly thick, stirring constantly.
Add cheese when at desired consistency. Serve individually over noodles.

INGREDIENTS:
2 cups small cocktail shrimp, peeled and cooked
KYVAN Savory Chicken Seasoning
1/4 -1/2 cup KYVAN Honey Apple Salsa
2 cups shredded Monterey Jack cheese
8 (8 inch) flour tortillas
Sour Cream, additional KYVAN Honey Apple Salsa

DIRECTIONS:
Season shrimp with KYVAN Savory Chicken Seasoning and combine shrimp with KYVAN Salsa in bowl and toss.
Layer shrimp mixture and cheese on 4 tortillas, dividing evenly.
Top each with second tortilla.
Cook about 3 to 5 minutes on a grill until toasted and cheese melts.
Cut into quarters and serve.
Serve with additional salsa and sour cream.
